Time to dish up: American pancakes

Ingredients
- Blueberries
- 2 tablespoons vanilla sugar
- 150 ml semi-skimmed milk
- 3 eggs
- 125 grams self rising flour
- Cinnamon to taste
- Unsalted butter for baking

Preparation
  1. Split the eggs. Add the egg whites and yolks each to a batter bowl. Sift the baking flour over the batter bowl with egg yolks and whisk in the milk until a smooth batter forms. Add the cinnamon and sugar.
  2. Whisk the egg whites (+/- 5 minutes). Gently mix the egg whites into the batter. This makes the batter extra fluffy.
  3. Melt some of the butter on the preheated baking plate and divide the batter into little pancakes. Place a few blueberries on top of the still undone batter of each pancake. Bake the pancakes for 5 minutes until golden brown. Turn halfway. Serve immediately. Bake the other portions the same way.

Tip - Serve with maple syrup.
